Teacher's Day Cake



This cake was for Urel's Teacher on Teacher's Day in Thailand.
It was low fat cake, I just use whites egg to made it, I mean that not used yolks egg.

Checkerboard Cake
"Original recipe from Good Housekeeping Favorite Recipes"

Ingredients:
3 1/2 cups cake flour (not self raising),
1 tbsp baking powder,
1 tsp salt,
1 cup butter,
2 cups sugar,
1 1/4 cups milk,
1 tbsp vanilla extract,
8 large egg whites,
8 squares (8 ounces) semisweet chocolate, melted and cooled.

How to make it?
  1. Preheat oven 180 degree Celcius. Grease three round cake pans (here I used lover pan). Line bottoms of cake pans with waxed paper, grease paper. Dust with flour.
  2. In medium bowl, combine flour, baking powder, and salt.
  3. In large bowl, with mixer at low speed, beat butter and 1 1/2 cups sugar until blended. Increase speed to high; beat until light and fluffy, about 5 minutes. Reduce speed to low. Add flour mixture, milk, and, vanilla; beat until just combined. Increase speed to medium; beat 2 minutes, occasionally scraping bowl.
  4. In separate large bowl, with mixer at high speed, beat egg whites until soft peaks form when beaters are lifted. Sprinkle in remaining 1/2 cup sugar, 2 tbsp at a time, beating until sugar has dissolved and egg whites stand in stiff, glossy peaks when beaters are liftes. Do not overbeat. Gently fold beaten egg whites, one -third at a time, into flour mixture until blended. Spoon half of batter into medium bowl. Into batter remaining in large bowl, fold in melted chocolate until blended.
  5. Makes a design checker at pan. Baked until toothpick inserted in center comes out clean.
